Kosher-for-Passover desserts are a food group on their own. It is hard to find a delicious and healthy dessert that tastes good and is actually good for us.
At Passover, just like any other time of the year, we want to eat healthily but we also want to have some sweet foods and desserts. It can be harder to find options for desserts which satisfy without leaving us totally constipated.
Using vegetables in a cake might seem a little strange but it is actually an effective and well established method. We can use vegetables like beetroot, carrot, pumpkin and zucchini in cakes. During baking, the natural sweetness is brought out. Vegetable cakes are notoriously moist and delicious, thanks to the natural water content of the ingredients making it easier to reduce or eliminate oil.
People might assume finding vegan alternatives to traditional ingredients like eggs and butter would be difficult. Baking is a scientific process which requires accurate measuring. But vegan options are plentiful, user-friendly and also won’t spoil as quickly as versions containing animal products.
